BHINDI DO PYAZA(BHARWAN)
We all are making different type of bhindi(okra) but this is another tasty dish of bhindi.As name shows onion is dominating in this dish.
INGREDIENTS :Bhindi(lady fingers) 250 grams
Masalas for stuffings:
- Coriander seeds 2 tablespoon
- Cumin seeds 1 tablespoon
- Turmeric powder 1/2 teaspoon
- Chilli powder 1 teaspoon
- Dry mango powder 1 teaspoon
- Fennel seeds 1 tablespoon
- Fenugreek seeds 1/2 teaspoon
- Oil 2 tablespoon
- Salt to taste
Masalas for gravy:
- Turmeric powder 1 teaspoon
- Coriander powder 2 tablespoon
- Cumin powder 1 tablespoon
- Red chilli powder 1 teaspoon
- Garam masala powder 1 teaspoon
- Ginger+garlic paste 1 tablespoon
- Tomato 1 chopped
- Small onion or shallot 15 nos
- Salt to taste
- Oil 2 tablespoon
- Fenugreek seeds 1/2 teaspoon
- Green chilli slit 2 nos
- Bay leaf 1
- For garnishing :
- Fresh coriander leaves chopped
- Grated ginger 1 tablespoon
METHOD :
- Wash and pat dry lady fingers.Cut the head of lady fingers and make a slit in the middle of each,leaving one inch either end ,keep aside.
- To make stuffing spices ,dry roast coriander,cumin,fennel and fenugreek seeds.After cooling make a coarse powder and mix with turmeric,chilli ,dry mango powder and salt.
- Now stuff each lady fingers with spice powder.
- Heat the oil in a non stick pan and shallow fry all the lady fingers,keep aside.
- For the gravy ,heat the oil in a non stick pan,add bay leaf,green chillies and fenugreek seeds , sliced onion,then ginger garlic paste and saute for 3 to 4 minutes.
- Now add all the powdered spices ,saute for 2 to 3 minutes,add tomatoes and salt,cook till tomatoes become softens.
- Add small onions(may cut the onions into half) and saute for 5 minutes ,add 1/2 cup of water.Cook till the moisture evaporates.
- Add fried lady fingers ,cover and cook for 2 minutes,turn off the flame
GARNISH WITH FRESH CORIANDER AND GRATED GINGER,SERVE HOT
