CHICKEN KORMA SIMPLE

Chicken korma is a Mughali Cuisine . It is a authentic traditional Indain Dish. This dish can be prepare in many ways but  I have used simple method to make this dish more tasty and lite. Although this recipie needs rich ingredients  but I have used  simple ingredients which maintain the taste and nutritious value.

Ingredients:-

  • Chicken 750 gms
  • Onion(sliced)  5 medium
  • Garlic cloves 10 nos.
  • Ginger 1 1/2 inch
  • Tomato sliced 1 medium
  • Green chillies- 2 nos.
  • Thick curd- 1  cup
  • Turmeric powder -1 teaspoon(1 tsp)
  • Pure ghee- 4 tbsp
  • Salt to taste
  • Water- 1 cup
  • Fresh corriander leaves- 3 tbsp

Whole spices-

  • Cumin seeds  -1 tablespoon (1 tbsp)
  • Corriander seeds- 2 tbsp
  • Black pepper- 1 tsp
  • Dry red chillie- 2 nos.
  • Big cardamom – 1 no
  • Green cardamom- 3 nos.
  • Cloves-  6 nos.
  • Cinnamon – 1 inch
  • Mace- 1/2 inch
  • Bay leaf- 1 no.

Method-

  • Wash chicken, marrinded with yoghurt and turmeric powder and keep aside.
  • Heat 2 tbsp ghee in a pan , add sliced onion , garlic cloves, Ginger fried till light golden
  • Add tomato and fry another 5 minutes. After cool down make a paste .
  • Now heat a pan and add whole specices and roasted lightly till nice aroma comes out.
  • Take out this roasted spices and after cool down make a fine powder.
  • Now heat the remaining ghee in pressure cooker and add chicken , cook till water evaporates.
  • Low the flame and add Onion paste cook for few minute . Then add roasted spice powder salt and mix well. Cook further  5-7 minute , stir gently .
  • Then add water , mix well and close the lid  and cook till first whistle blow after that slow the heat and cook for 5-6 minutes further.
  • Switch off the flame and wait further  5-6 minute then garnish with corriander leaves and serve hot with Lachha paratha/Simple paratha or steamed rice.
