AHUNA HANDI MUTTON- CHAMPARAN STYLE

Ahuna Mutton is very authentic Bihari dish.This dish is prepared in sealed earthern pot,which makes its taste  different.This Mutton dish is slow cooked on charcoal for hours .But I have tried it on layer of sand on iron tawa on gas stove. Believe me the dish came out very well with alluring flavour.

Ingredients-

  • 750 Gms Raw Mutton
  • 500 Gms Onions
  • 6 tablespoon  Mustard Oil ( Well Heated)
  • 3 tablespoon pure ghee
  • 6-7  Whole Garlic cloves
  • 1 Tbsp Ginger Garlic Paste

          Whole Spice

  • 3 Dried Red Chillies
  • 4 Green Chillies
  • 4 – 5 Black Peppercorns
  • 3 – 4 Green Cardamom
  • 1  inch Cinnamon
  • 2 Black Cardamom
  • 4 – 5 cloves
  • 3/4 tsp Coarse Sauf
  • 1 Tej Patta

          Powdered Spice

  • 4 tsp Coriander Powder
  • 3 tsp Jeera Powder
  • 1 tsp Red Chilli Powder
  • 1 tsp Kashmiri Red Chilli Powder
  •  Salt to taste
  • 2 tsp Haldi Powder
  • 1 tsp Garam masala

Method-

Step-1   Wash the mutton pieces.

Step 2- Heat mustard oil and ghee together until it’s hot. Turn off the flame and let the oil cool down.

Step-3   Slices the onion and cut the green chilli in half.

Step-4   Take a bowl  and add sliced  onion, Ginger garlic paste, Garlic cloves, Whole spices , Powdered spices, Musturd oil , ghee and Salt. Mix well and add Mutton pieces and mix well.

Step-5   Add  little oil in Earthern pot, then place all the mutton mixture in that Pot.Cover the pot with lid and seales it with Atta Dough.

Step-6   Now place Earthern Pot on Charcoal stove or Put the layer of Sand on Iron tawa and place the pot on high heat. After 15 minutes slow the heat and further cooked at leat  45 minutes  and cool the Pot for 10 minutes . Shake the pot and again place this pot on Tawa with sand on medium heat for 45 minutes. Again cool the pot and shake once again and then place the pot for further 30 minutes on Tawa layred with sand

Step-7   Then switch off the byner and cool for at least 10 minutes and serve  with Hot steam rice.

Points to remember

  • Heat the  Mustard Oil And Ghee and let it cool down before using .Do not skip this step.
  • Earthen Pot – Use an earthen pot to get that flavor and taste . This also helps  to  digest the food.
  • Shake the pot occasionally
