SATTU KA PARATHA

Sattu Ka Paratha  is made out of sattu , the roasted black gram flour and very nutritious . It is great hydrating  and full of minerals . Sattu  is very famous in  people of Bihar and used in many authentic Bihari recipes. In those receipes Satty  paratha is very common  . Paratha is cooked on tawa and served with tomato baigan choka, Red chilli pickles and green tomato chutney

INGREDIENTS:

For dough:

  1. Wheat flour     500 gm
  2. Ajwain              2 tea spoon
  3. Ghee                 2 table spoon
  4. Salt                   to taste

            (Mix all the ingredients and make a normal dough)

For stuffing:

  1. Sattu (Chane ka)   250 gm (black gram)
  2. Garlic                      10 cloves
  3. Ginger                    1 ½ inch long (chopped)
  4. Kalaungi               1 tea spoon
  5. Ajwain                  1 tea spoon
  6. Green chilly (chopped)             5
  7. Coriander leaves     2 table spoon (chopped)
  8. Mustard oil            2 table spoon
  9. Lemon juice           2 lemon
  10. Pickle spices           as per choice
  11. Black salt                1 tea spoon
  12. White salt to taste
  13. Onion                      finely chopped or grated

METHOD:

  • In a pan take the Sattu. Then add chopped onion, ginger, garlic coriander leaves, green chillies, Ajwain, Kalaungi, salt, mustard oil, pickle (as per choice) with two lemon juice. Mix all the ingredients properly. If necessary add 4 to 5 spoon of water.
  • Take a Wheat dough (Medium Size) Roll it in small roti   and place 2 tablespoons of filling in the middle, cover from all sides and roll the paratha 1/2 inch thick.
  • Heat a tawa and cook each side of the paratha until golden brown, add a few drops of ghee/oil while on tawa.
  • Repeat the process for the rest of the parathas.
  • Serve these hot Sattu Ka Paratha Paratha  with tomato baigan choka, Red chilli pickles and green tomato chutney.
