ALOO DUM SPECIAL
Winter is coming and there are many vegetables floating on market.New baby potatoes are one of them.Aloo dum is all time favourite dish.Try this Aloo Dum Special with Poori or Rice.
INGREDIENTS :
- Baby Potatoes 250 grams (25 pcs)
- Tomato puree 1 cup
- Ginger +garlic paste 2 tablespoon
- Coriander powder 1/2 tablespoon
- Red chilli powder 1/2 teaspoon
- Fenugreek seeds 2 teaspoon
- Thick curd 2 tablespoon
- Star Anise (chakra phool) 1pc
- Sugar 1/2 teaspoon
- Mustard or Olive oil 3 tablespoon
- Pure ghee 1 teaspoon
- Green chilli 3nos
- Kashmiri red chilli powder 1 tablespoon
- Salt to taste
- Asafoetida a pinch
- Water 2 cups
SPECIAL MASALA
- Cumin seeds 1 tablespoon
- Coriander seeds 1 tablespoon
- Black pepper 1 tea spoon
- Green cardamom 4 nos
- Cloves 6 nos
- Bay leaf 1
- Cinnamon 1 inch
DRY ROAST ALL THESE MASALAS AND MAKE FINE POWDER
METHOD
- Half boil the potatoes,peel the skin and prick in it by fork
- In boiled potatoes mix 1 tablespoon ginger garlic paste ,kashmiri mirch powder and keep aside
- Heat oil in kadhai or pan and fry the potatoes and keep aside
- Now in the same pan add bay leaf,star anise,whole green chilli,fenugreek seeds and asafoetida
- Low the flame ,add remaining ginger garlic paste , tomato puree ,chilli powder and cook for 5 minutes
- Now add coriander powder ,thick curd and special masala .Saute for 2 minutes ,add potatoes ,pure ghee ,salt and stir well
- Then add water and bring it to boil ,low the flame and cover the pan with lid .Let the gravy to cook and till potatoes gets soft.
SERVE HOT ALOO DUM WITH ROTI OR RICE
