Dubki Wale Aloo
Mathura ke Dubki wale Aloo is traditional spicy potato curry. It is simple street food goes well with Kachori or Poori. In this food minimum oil is used .
Ingredients:-
- Potato- 4 medium
- Whole gram masala- 2 green cardamom, 4 cloves, half inch cinamon, 1 big cardamom
- Fresh corriander leaves- One Cup
- Green chilli- 3 nos
- Ginger- 1 1/2 inch
- Dry mango powder- 1 tablespoon
- Black salt- 1/2 teaspoon
- Corrinder Powder- 1 teaspoon
- Turmeric powder
- Water- 4 cup or as require
- Salt – to taste
For Tempering
- Dry red chilli- 2 nos
- Cummin seeds- 1 teaspoon
- Asafoetida(Hing)- 1/4 teaspoon
- Oil/Ghee- 1 tablespoon
METHOD-
- Boiled potatoes and mashed with fingers in little big pieces.
- In a mixer grinder firstt take whole garam masala and crushed it.
- Then add coriander leaves,green chillies,ginger,turmerric powder,coriander powder,salt and little water.Grind it in a paste.
- Now take a kadhai add mashed potatoes and green paste and mix well.
- Then add 4 cups of water or required more because we have to make a thin gravy first and after 45 minutes in low heat ,it become thick.Put on the flame and bring it to boil.When boiling starts slow the heat and simmer the gravy for 45/50 minutes.Stir occaisionally.Turn off the flame.
TEMPERING-
- Heat the oil in a tempering pan.Add cumin seeds,wheen it starts crackling then add hing and dry red chillies and pour into the potato gravy.Dubki wale alooo is ready.
- Serve hot with kachori or poori.
