Mishti Doi
Mishti doi is a classic Bengali sweet made with milk, curd culture and jaggery or sugar. The jaggery used traditionally to make Mishti doi
INGREDIENTS:
- 1 Cup Good quality Curd
- 750ml full cream milk
- 1 Cup Sugar
METHOD:
- First remove excess water from Curd and place aside.
- On Slow heat first we place thick base non sticky pan and then add almost 3/4 cup sugar in that pan with slow heat. When sugar start meting then we start stirring and wait till light brown. We have to careful so that this should not be overcooked and taste become bitter. When the melted sugar color change in light brown then we have to add milk slowly.
- Now Boil the milk mixture till quantity become 2/3 and add rest sugar also . After that wait till it’s temperature is slightly higher than body temperature .
- In bowl we have to mix the hang curd in smooth paste and add milk slowly in that bowl.
- We have to stir the milk mixture and make forth on top .
- Now we have to put this mixture in Earthen pot and place this pot in some place where it is hot and place this for 8-10 hrs.
- After that we have to keep this pot in Freezer for 4-5 hrs. and serve
Sugar or jaggery are totally based on taste .
