KACHA GOLA
Kacha Gola is a very famous sweet from west bengal and made from fresh chenna.The sweetness is mild and the main aroma is infused by cardamom and saffron.
INGREDIENTS –
- Full cream milk – 1 .5 Liter( Fresh chena made from Fresh milk) -250 gms
- Sugar powder – 1/2 cup
- Green cardamom powder-1 teaspoon
- Saffron strands – a pinch
- Muffin paper liner
- Lemon juice – of 2 lemon
- Soaked saffron strands in 1 tbsp milk
METHOD
- FOR CHENA-boil milk , when starts boiling turn of the flame.Then add lemon juice mix with 1/4 cup of water.Leave for 5 minutes.When milk cuddles and chena gets separated from whay.
- Strain the whay in a muslin cloth and wash chena 2/3 times with water so that smells of lemon goes away.
- Collect the chena ,squeeze completely and hang the muslin cloth for 30 minutes.
- Now mash chena nicely and make it a smooth dough texture.
- Then add cardamom powder,sugar powder and mix well.Make a soft dough.
- Make a lemon size balls from chena mix and place it in a paper liner.
- Kacha Gola is ready.
- Top every kacha gola with saffron strands soaked in milk.
- Refrigerate Kacha Gola minimum 1 hour before serving.
